Homemade Wine Basics

Lovers adhere to the rules when preparing cherry wine:

  • take ripe fruits;
  • berries are not washed, there are strains of wild yeast on them, dirty ones are wiped with a napkin;
  • dishes in which do-it-yourself cherry wine is prepared, scalded with boiling water and dried;
  • suitable containers are wooden, enameled, glass, stainless steel.

Making wine from cherries takes place in several stages:

  1. Sourdough is made from crushed fruits, sugar and water, wine yeast, put in a dark place for 2-3 days for vigorous fermentation. More often they take the entire volume of fruit at once.
  2. The sourdough is filtered and left for quiet fermentation for 25-60 days.
  3. A water seal or a rubber glove with a hole made by a needle is installed on the bottle.
  4. Clarification of a liquid is a signal about the end of the process.
  5. After the time indicated in the recipes, add sugar or syrup.
  6. According to a simple recipe for cherry wine at home, the drink is poured from one container to another 4-6 times, freeing it from sediment.

A simple sweet cherry wine recipe

For this option, you can use 1 g of tannin per liter of wort.

  • 3.5 kg of berries;
  • 0.7 l of water;
  • 0.4 kg of sugar;
  • 1 lemon.

For each kilogram of crushed fruit, add 0.25 liters of water and lemon juice. During fermentation, remove the foam with a wooden spoon. Then filter the wort, add 0.1 kg of sugar to 1 liter of liquid. The bottle is placed in a bowl where the juice is poured. After 3 days, the pulp is collected at the top, the sediment is at the bottom, in the middle is a young cherry wine with seeds, obtained at home. It is drained through a tube, allowed to stand, systematically getting rid of the sediment.

Cherry seedless wine

By following this cherry wine recipe, the granulated sugar is divided into 3 parts and added gradually.

  • 10 kg of berries;
  • 1 kg of sugar;
  • 500 ml of water;
  • 1 tbsp. a spoonful of citric acid.

The bones are removed.

  1. They put the raw materials in a bottle, pour out the water, cover with gauze. The foam is collected.
  2. Strain the wort, mix with half granulated sugar and acid.
  3. Twice after three days, 200 ml of pitted cherry wine are poured, dissolving the remaining sugar, and the compositions are again combined.
  4. On the 50-60th day, the drink is tasted for sweetness.

Cherry juice wine at home

For 5 liters of juice, 7 kg of raw materials are needed.

  • 2.1 kg of sugar;
  • 30 g of tartaric acid;
  • 15 g tannic acid;

The seeds are removed, the fruits are passed through a blender. Granulated sugar is diluted in warm water, yeast is added. The syrup is combined with the berry mass and left to ferment.

Cherry and black currant wine recipe

The addition of currants will make it possible not to use citric acid.

  • 1 kg of cherry fruits;
  • 2 kg of black currant;
  • 0.5 kg of granulated sugar;
  • 2 liters of water;
  • 10 g alcohol yeast.
