Do I need to boil the waves before salting or pickling

Volnushki are mushrooms that are classified as conditionally edible. This means that they cannot be used raw.

Waves begin to appear at the edges of birch forests in early June. They can be easily seen from afar by their pinkish cap with rounded edges. They can grow singly or form entire colonies. Places where you can find waves, usually sunny, warm, with an increased presence of birch trees.

The cap of the mushroom grows up to 12 cm in diameter, there are plates under it. When broken or cut, the wave reveals white pulp and milky juice. The juice is bitter and pungent, so to prepare a wave, you need to additionally soak and cook.

Many mushroom pickers believe that additional processing of mushrooms is not necessary when salting or pickling. This is not true. Despite the fact that the hot method of salting or pickling is an additional method of heat treatment, cooking the little ones helps to improve the overall taste of the workpiece and prevents the settling of toxins inside the fruiting body or cap.

Preparing mushrooms for boiling

Volnushki can be boiled with other mushrooms, which are conditionally edible in type and do not differ from each other in cooking technology.When cooking, the whites are cut into pieces, they can be cooked with parts of milk mushrooms, russula, camelina.

Advice! For cooking, the mushrooms are cut into equal parts so that they are boiled until they are even cooked.

How to cook waves correctly

After soaking, the mushroom mass is cleaned again. The hats are washed from the formed mucus, the sections on the legs are renewed. Before salting in tubs, the absence of additional cooking is allowed, but in this case it is taken into account that the salting technology must fully comply with the rules:

  • mushrooms are soaked for three days, the water is changed daily;
  • then the tubs are laid out on the bottom, salted, covered with a second layer, salted again;
  • the last layer is covered with cabbage leaves or currant leaves, then the oppression is evenly distributed;
  • the tubs are stored at a temperature not exceeding + 10 ° С, full readiness occurs in 2 - 3 months.

In order to properly cook salting waves, it is necessary to determine the further method of salting. The selected processing option depends on the amount of salt and the cooking technology.

Before frying

Fried mushrooms with potatoes and onions is a delicious traditional Russian dish. For him, use a boiled mass. Before frying, you can cook the waves until half cooked. Further heat treatment involves bringing the mushrooms to full readiness. They are re-boiled for 15 - 20 minutes, then fried until completely softened.

Before freezing

For freezing caps and legs, the cooking time is reduced to 15 minutes. Dry them thoroughly on a towel before freezing.   • with the cold method of pickling, the waves are cooked for 20 - 25 minutes;
  • with a hot marinating method, it is enough to boil the product for 15 minutes.
Important! The hot marinating method involves pouring the marinade to a boil over the food or boiling it in brine with additional ingredients.

How much to cook mushrooms without soaking

After tedious gatherings, mushroom pickers try to quickly process the collected material and put the blanks for storage. Fans of fries with mushrooms believe that soaking is compensated by longer cooking. It's a delusion. Soaking and boiling have different goals:

  • the caps and legs are soaked to eliminate the bitterness that the milky juice gives;
  • boiling is necessary for the complete removal of toxic substances and the complete elimination of food poisoning.

Waves are not cooked without first soaking. Boiling does not help to get rid of the bitterness of the milky juice that the plates of the caps contain.

Important! The broth that remains after boiling is strictly forbidden to be used for further cooking as a mushroom broth.

How many boiled waves are stored

There are times when the soaking time has expired: the mushrooms are boiled, but there is no time for further processing. Then the processed waves are put away for storage, so that pickles or marinades can be prepared later.

The best option for preserving the boiled parts is freezing. They use plastic containers or plastic bags with convenient flaps.

Cooked parts are stored in a refrigerator at a temperature of 0 to +2 ° C, no more than a day. Before further preparation, it is recommended to additionally blanch them for 5 minutes. Storage in the refrigerator makes the legs less elastic, the caps may change color: they darken partially.
