This can include a wide variety of vegetables, but most of the lecho is made from tomatoes, bell peppers and onions. To make the salad tastier, you should choose only the ripe and freshest vegetables. And to make the look of the workpiece more original, you can pick up fruits of different colors. But not all housewives like to make such blanks. Sterilize salad jars very inconvenient, and besides, they can crack.   • fleshy juicy tomatoes - two kilograms;

  • salt to taste;
  • granulated sugar to taste;
  • black allspice to taste.

The preparation of the ingredients begins with pepper. It is thoroughly washed under running water and all seeds and stalks are removed. Then the vegetables are cut into pieces. These can be half rings, slices, and cubes. Next, vegetable oil is poured into a large frying pan and heated on the stove. All the chopped peppers are thrown there and fried.

Attention! At this stage, the pepper does not need to be cooked to full readiness.

Now let's move on to the tomatoes. They need to be poured with boiling water and left for two minutes. After that, the fruits are placed in cold water and the skin is removed. In this form, the tomatoes should be grinded or chopped with a blender. Now you can send the tomato mass to the prepared pan.

Place the saucepan on the stove, turn on a small fire and bring to a boil. After that, salt, granulated sugar and allspice are thrown into it to taste. Further, fried pepper is added to the tomato mass and the salad is continued to boil over low heat for 20 minutes.

A couple of minutes before readiness, table vinegar is poured into the workpiece and the heat is turned off. The salad is immediately poured into jars and rolled up. Containers for lecho must be prepared in advance. All cans are thoroughly washed with soda and scalded with boiling water. This method is very convenient, since you do not need to look for a huge saucepan to sterilize each jar of salad. Such lecho can be stored in the cellar for a long time.

Lecho with carrots without sterilization

To prepare such a spicy salad, you must prepare:

  • Bulgarian red and yellow peppers - 2 kilograms;
  • ripe fleshy tomatoes - 3 kilograms;
  • vegetable oil - 1 glass;
  • large carrots - 4 pieces;
  • incomplete glass of sugar;
  • 2 tablespoons salt (or to taste)
  • table vinegar –8 tablespoons.

Cooking starts with tomatoes. Pour boiling water over them and remove the skin. Carrots are peeled and chopped together with tomatoes using a blender or meat grinder. Then the liquid mass is put on low heat and boiled for 30 minutes.

While the tomato is languishing, you can start preparing the bell pepper. It is thoroughly washed under cold water and all the stalks are cut out. Then all seeds are shaken out from each fruit.The vegetables are now completely ready for slicing. You can do this in any way convenient for you. Large slices, half rings and small slices look very beautiful in a jar.

After the time has elapsed, peeled and chopped bell peppers are added to the tomato-carrot mass. Immediately after that, you should throw sunflower oil, salt and an incomplete glass of granulated sugar into the pan. All this is boiled over low heat for another 30 minutes. Don't forget to try the salt dish. More spices can be added as needed. Some housewives first throw in only a part of the spices, and then try and add as much as needed to taste.

Important! 5 minutes before readiness, table vinegar should be poured into the salad.

Now you can turn off the heat and start rolling the cans. Previously, all containers and lids are washed and sterilized in boiling water or an oven. After seaming, the cans are put down with lids and wrapped in something warm. In this form, the lecho stands until it cools completely. Then it is moved to any cool room.

You don't have to roll up such a salad, but eat it right away. It stands well in the refrigerator for up to a week. If you are afraid that you will not have time to eat everything, then you can reduce the amount of ingredients by 2 times. Although the salad turns out to be so delicious that it rarely stagnates in the refrigerator.
