Cranberry kvass

Kvass is a traditional Slavic drink that does not contain alcohol. It not only quenches thirst well, but also has a positive effect on the body. A drink purchased in a store contains many impurities, and these, in turn, are not always useful for the human body. Therefore, it is better to give preference to kvass, which is prepared according to one of the recipes on your own. There are several basic recipes. Cranberry kvass is a good solution as it is refreshing and suitable for children and adults alike.

A simple recipe for cranberry kvass

A tasty, brightly colored sweet and sour drink will be appreciated by many. Homemade cranberry kvass is usually highly carbonated. Even 20-30 years ago, it was difficult to prepare it, since it was not possible to find all the necessary ingredients. But today in supermarkets at any time of the year you can buy, if not fresh berries, then at least frozen ones.

Ingredients for a simple recipe:

  • 10 tbsp. water;
  • 0.4 kg cranberries (fresh or frozen);
  • 1 tbsp. granulated sugar;
  • 1 tsp dry yeast.
Important! If you replace sugar with honey, then the drink will turn out to be even more useful and pleasant, but it is better to add it to warm cranberry kvass, and not to hot one.

The product is prepared according to this recipe as follows:

  1. Sort out the cranberries, remove the spoiled ones and rinse under water. If they are frozen, defrost and dry thoroughly.
  2. Rub the cranberries through a sieve so that only one skin remains. As a result, you need to get a liquid cranberry puree. You need to add it raw - then more nutrients will remain.
    To make the processing process faster, it is better to pre-grind the berries with a blender.
  3. Put the pan on the fire, adding 1 liter of water and cake left after grinding the berries. Boil. Then add sugar and let it boil again. Boil for 5 minutes.
  4. Remove from heat and let cool cranberry drink. Then strain through a sieve, while squeezing the cake thoroughly.
  5. Then you need to pour a glass of warm kvass. You will need it in order to dilute the yeast.
  6. Combine and mix all the ingredients of the recipe. Let the yeast rise for 20 minutes, then add it to the composition.

    Good fresh yeast should foam in 15–20 minutes. If it is not there, then the product is spoiled.
  7. Mix everything, cover the dishes with cling film or gauze, leave for 10-12 hours to ferment. After the allotted time, foam should appear on the surface - this is a good sign indicating that the fermentation process is correct.
  8. Pour into bottles or just close tightly with a lid, send to the refrigerator for three days so that it becomes saturated. During this time, the smell of yeast will disappear, and the kvass will become carbonated.

The ready-made berry drink can be stored in the refrigerator for up to two weeks, while every day it will become more delicious.

Important! For fermentation, it is better to choose dishes made of glass, ceramics or enamel.

Cranberry yeast kvass recipe

Cranberry kvass with various additives is recommended for people with hypertension, diseases of hematopoiesis and anemia. To prepare a fortified drink according to this recipe, you will need:

  • 0.5 kg of cranberries;
  • 2 tbsp. Sahara;
  • 5 liters of water;
  • 1 tsp dry yeast;
  • 1 tsp raisins;
  • 20 rye bread crumbs;
  • 1 tsp herbs oregano.

This recipe is prepared like this:

  1. Mash cranberries thoroughly, add warm water, mix.
  2. Add water to the yeast in a separate container and give it time to rise.
  3. Combine all the ingredients of cranberry kvass, mix and leave in a warm place for a day so that it begins to ferment.
  4. Pour into bottles and leave for another 8 hours.
  5. Store ready-made cranberry kvass in the refrigerator.

Any of the drinks according to the presented recipes improves digestion, contributing to the easy assimilation of food. It also strengthens blood vessels, is rich in vitamin C and microelements necessary for the proper functioning of the systems of the human body: iron, manganese, molybdenum.

You can add not only oregano to the recipe, but also lemon juice, mint, lemon balm and other spicy herbs that make the drink even more piquant.

When preparing kvass according to any of the recipes, it is important to carefully sort the berries so that there is no dirt and damage in them. Otherwise, the workpiece will deteriorate. Cranberry kvass without yeast is very useful. To prepare it, you will need the following products:

  • 4 liters of water;
  • 1 kg of cranberries;
  • 0.5 kg of sugar;
  • 1 tbsp. l. raisins.

According to this recipe, you can make kvass not only from cranberries, but also from raspberries, blueberries, currants, blackberries, lingonberries.

Step-by-step cooking technology:

  1. Sort the berries thoroughly, removing all inedible parts, rinse under running water and dry on a paper towel. After these procedures, the cranberries are transferred into a container and crushed to a puree consistency.
  2. Boil syrup from water and granulated sugar, pour cranberries with them and mix.
  3. The acidity of kvass can be reduced by adding honey to it.
  4. Cover the container with gauze and let it brew for 24 hours.
  5. After a day, filter and pour into bottles, in each of which you need to add several pieces of raisins.
  6. Close tightly and store in the refrigerator.
Important! It is better to store a drink prepared according to any of the recipes in champagne bottles and serve only cold - this way the taste becomes rich and pleasant.
