More than 200 varieties belong to the genus Klitotsybe, or Govorushka. In Russia, no more than 60 species of them grow - edible and poisonous. The saucer-shaped talker is small in size and practically does not emit mushroom aroma, which is why many mushroom pickers bypass it.

Where saucer-shaped talkers grow

Talkers grow throughout the temperate climatic zone. They prefer deciduous and coniferous forests of the western part of Russia, Siberia and Primorsky Krai. Populations of these mushrooms are also widespread in European countries, Belarus, Turkey, China, in Asia - East and West. Saucer mushrooms are found in fields, meadows, along the edges of country roads and even in park areas.

What saucer talkers look like

Saucer-shaped talkers are small in size and snow-white in color. The hat is from 3 to 7 cm in diameter in young specimens is flat and even, but during growth it acquires a cupped shape. Adults, overgrown representatives acquire a funnel-shaped, saucer-shaped shape, which explains the name of this representative of the mushroom family. The hats have a dry, slightly dull and velvety surface of white, creamy color, in some cases with a pinkish or yellowish color. The plates are very thin and smooth, with numerous small ramifications. The leg is from 4 to 6 cm in height, slightly widened towards the base. In color, it may be slightly lighter than the cap. The surface of the leg is smooth, fibrous, slightly pubescent with velvety mycelium. The shape is cylindrical. The pulp is thin, snow-white, does not change color on the cut.

Is it possible to eat saucer-shaped talkers

These mushrooms are classified as conditionally edible, therefore, they can be eaten only after preliminary heat treatment. Before preparing culinary dishes, they are cleaned, sorted, washed and boiled. The broth is drained.

Taste qualities of the mushroom saucer-shaped govorushka

The saucer-shaped talker does not differ in gastronomic value. Some connoisseurs argue about the absence of special taste and aroma, the mushroom, others talk about the unpleasant taste of rancid flour and cotton, even somewhat fluffy pulp. When combined with other foods, the spicy flavor of the mushrooms must be taken into account.

Benefits and harm to the body

The talker is saucer-shaped, low-calorie, so it can be eaten during dietary meals. In addition, fruiting bodies contain a large amount of nutrients:

False doubles

The most dangerous counterpart of a saucer-shaped govorushka is a whitish or discolored govorushka. It has a small size: its cap is up to 5 cm in diameter, the leg is up to 4 cm. It differs from the saucer-like relative in its smooth, shiny surface, which in damp weather is covered with a small amount of mucus. In overgrown fruiting bodies, the leg becomes hollow. Whitish talker - a poisonous mushroom, deadly to humans.

Collection rules

Fruit bodies are harvested in dry weather from late June to early October. Only young specimens are suitable for food, the diameter of which does not exceed 4 - 5 cm. Only the caps are cut, leaving the leg intact, and put in a basket face down so that the mushrooms do not break during transportation.

Important! Overgrown specimens are not collected: they are unsuitable for food.

Use

This variety of mushrooms is eaten only by hats: the legs during cooking become rubbery and tough. Pre-boil them in a large amount of salted water for 30 minutes. When the hats have sunk to the bottom, then they are ready. They are thrown into a colander and allowed to drain. The broth is not used for food. Prepared fruit bodies are fried in butter with the addition of onions or stewed.

Conclusion

Despite the fact that the saucer-shaped govorushka cannot compete with mushroom species valued in gastronomy, it contains many useful properties and can be used in the preparation of medicines according to traditional medicine recipes. It is not recommended to collect this variety for inexperienced, novice mushroom pickers, since there is a high risk of confusing white and light mushrooms with poisonous twins.
